Marshmallows

A regular sized marshmallow has about 4 grams of added sugar in it. But on the other hand, lets face it, no one can put themselves through the horror of eating only one, and walking away.

Well, to sum up, a cup of mini marshmallows contains about 29 grams of sugar, which is 10 grams more than the recommended daily sugar dose and 400 empty calories.

This leads up to excessive sugar intake, further leading to greater calorie intake, resulting in some severe health issues, among gaining weight.

And what is more, these foods that are rich in sugar do not possess any healthy nutrients at all. So, the more sugary products you consume, the less space there will be for fruits and vegetables in your diet.

The long term sugar intake has been shown to cause some serious health issues in the long run. Some of them are a heart disease, diabetes or being insulin resistant, food addictions, increased levels of cholesterol, some types of cancer, such as pancreatic cancer, and teeth issues.

For this reason, in addition we suggest that you try these marshmallows, which are incredibly tasty and in the meantime free of the added sugars.

They can even be prepared in a chocolate or a coconut version, depending on your preferences. We assure you that when you make them, and try them, you will never goto the store to buy ordinary marshmallows again!

For this recipe you will need ½ teaspoon of vanilla extract, 1/8 teaspoon of salt, ½ cup of honey, ½ cup of cold water and one and a half tablespoon of gelatin.

For the preparation part, first off you will need to take aloaf pan and grease it a bit, cover with parchment paper, and grease it again.

Then, take a medium sized bowl, preferably with an attached mixer, put the gelatin in along with ¼ cup of water. Leave this aside to soften up a bit.

On the other side, in a small pot, add the remaining ¼ cup of water, along with the honey, salt, and place it over medium heat. You need to bring this mixture to 240 degrees using an accurate candy thermometer.

You can also make sure youve boiled this mixture well enough if you take a bit of the liquid and dribble it into a bowl of ice cold water. When you take it out, it shuld be in the candy stage. In order to obtain this temperature, you need to cook for about 7 minutes.

Next, take the hot syrup off the heat and slowly pour it over the gelatin mixture. In this case it would be best if you use a hand mixer, on low.

Then, add the vanilla and beat for about 15 minutes or so, just until a thick mixture is created. Finally, set the panaside, uncovered, over the night to dry. After that, just cut it into squares and it is ready to be served. Thats it!

If you want the cocoa version, just roll the marshmallows into cocoa powder, and for the coconut version, toast up a cup of coconut flakes, unsweetened of course, and roll the marshmallows in it.
